Making for my friend who is vegan and gf. Would you recommend a flax egg? Or bobs red mill egg replacer? Thanks!

I think flax egg could work, although I haven’t tried it myself yet. But something tells me yes

Cannot wait to try this! I do not do refined sugar, and usually use coconut sugar but have also used date sugar or maple sugar (crystalized). Do you have a preference?

Thank you for adding this here! Does your 'basic' GF flour mix work 1:1 in this recipe?

Cannot wait to try these, as I used to delight in a small sack of these from Tartine.

Now, if you can just create a gluten-free version of your sinful eclairs! I ate 3 of those, while sobbing, after putting my first born on a plane to college across the country. And have often joked with friends I want those eclairs as my last meal 😀
