I'm so impressed with the texture of these- they really are light and hold their shape. Mine actually did dome, but I used water and about 1 tsp apple cider vinegar so maybe that factored in. Next time I might try using mashed banana and even more molasses for a kind of banana bread.
Rocker Oysterfellows, next to Fishetarian also has a lot of GF options. Hard to pass up the fish and chips or gf chowder at Fishetarian though.

I’d say sorghum or a GF flour blend would work best. Or buckwheat mixed with a GF blend. Tell me if you try one!
