Three tricks that make this GF layer cake with whipped cream and strawberry sauce extra delicious + how-to video for making the yellow cake layers

Sometimes it’s the simplest desserts that I ponder over the most; too many possibilities and directions! I knew I wanted a cake centered around strawberries. I wanted pretty, light, fresh, creamy, and fruity; a trifle-like contrast of flavors, and not too sweet. By Tuesday I was in a total state of artistic dilemma, rudderless in a sea of cake component choices. By Wednesday I narrowed down my idea and hit the kitchen testing.
I ended up trying out four different fillings: cream cheese whipped cream, pink confectioners’ sugar-based frosting, Swiss meringue, and finally the winner of the bunch, a lightly sweetened whipped cream, stabilized with Greek yogurt!
