Can one have too many chocolate chip cookie recipes? I usually like a small, thin CC cookie, crisp and a little craggy with chocolate and nuts, but I wanted to work on this thicker style that has become so popular and WOW do I love these. A popular way of making cookies chewier is by underbaking, but I’ve never been a big fan of undercooked cookie dough. A slight underbake is all you need, along with the following steps to a perfect thicker cookie.

A note on alternative flours: I tried this dough with oat flour, but found they were better with the GF blend, but only marginally. If you want to make a whole grain cookie, oat is a good flour to use (I haven’t tried other whole grains yet).
