Today’s recipe is a very quick cake that you can mix and bake in under an hour. Use fresh cherries if you can, but frozen and defrosted cherries work well, too.
The texture of this cake is very much like a financier, the small, French cakes that are usually made with almond flour, melted butter, and egg whites and have a very pleasing toothsome crust and tender, rich crumb.
