Seeded Olive Oil Crackers
Seedy, scrumptious, snacky, super quick! A one-bowl cracker recipe that you can add any savory flavoring to and will make you re-think store-bought
Making homemade crackers used to seem too laborious for a quick snack, and there are enough good store-bought ones that it was a project I often overlooked—until I really set about making ones that were flavorful, healthier than just a white flour Saltine substitute, and didn’t need cheese or dip to make them interesting. A stand-alone, craveable, delicious little treat that looks, smells (wait til you bake them), and tastes like you put effort in, but is in fact a quickly made, one-bowl dough.
These are crisp, super seedy, and flavorful with chia, flax, and sesame, and the almond flour and olive oil give them a bit of richness so that they can be eaten on their own with a cocktail or mocktail.
The dough can also be flavored in infinite ways with herbs, different seeds (“everything bagel” seasoning would be so good), some cheese (use a few tablespoons of a dry one like parmesan), Pimenton (smoked paprika), and one I’m dying to try is a version with some mashed anchovy. Using white wine subbed for the water is something I want to try next as well, and nigella seeds or fennel would be so good.
